Goats' cheese and dill quiches

WHAT DO I NEED?
Makes 12.
3 sheets shop-bought shortcrust pastry or 600g (1 1/3lb) shortcrust pastry
Filling:
80g (2 3/4oz) goats' cheese
1/4 cup dill sprigs
4 egg yolks
1 1/3 cups (10 1/2fl oz) single or pouring cream
1/2tsp finely grated lemon rind
sea salt and cracked black pepper
WHAT SHOULD I DO?
Preheat the oven to 160C/320F. Cut each pastry sheet into four squares. On a baking tray lined with non-stick baking (parchment) paper, line 12 greased egg rings with the pastry and trim any excess.
Place the goat's cheese and dill in the cases. Whisk the egg yolks, cream, lemon rind, salt and pepper. Pour the egg mixture into the cases. Bake for 30 minutes or until the top is golden and the filling is set. Remove the egg rings to serve.
